Instructions

Make the Dough: In a large bowl or the bowl of a stand mixer, combine the flour, salt, and yeast. Add the warm water and 1/4 cup of olive oil, and mix until a shaggy dough forms. Knead the dough on a lightly floured surface or with a dough hook for 5-7 minutes, until smooth and elastic. Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Prepare the Pan: Preheat oven to 425°F (220°C). Generously drizzle olive oil in a 9×13-inch baking pan.

Shape the Focaccia: Once the dough has doubled, gently transfer it to the prepared pan. Use your fingertips to press and stretch the dough to fill the pan, creating an even layer. Allow to rest for 30 minutes.

Create Your Garden: Drizzle the top of the dough with more olive oil. Use your fingertips to create dimples all over the dough. Now, get creative! Arrange your chosen vegetables and herbs on top of the dough, pressing them lightly into the dimples. Think of it as a beautiful garden design. Sprinkle generously with coarse sea salt.

Bake the Focaccia: Bake for 20-25 minutes, or until the focaccia is golden brown and the vegetables are tender. Looking for more vibrant veggies? Top your cooked foccaccia with fresh herbs or vegetables to have your foccaccia photo ready. Sprinkle with flakey sea salt. Let cool slightly before slicing and serving with our Sauvignon Blanc.
