Ingredients (Serves 4–6)

  • 4 cups sugar snap peas, thinly sliced on the bias
  • 4–5 radishes, thinly sliced
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons fresh mint, torn or thinly sliced
  • ½ cup French feta, crumbled
  • ¼ cup sliced almonds, lightly toasted (optional)

Easy Chardonnay Vinaigrette

  • 2 tablespoons Rombauer Chardonnay
  • 1 tablespoon Champagne vinegar or white wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon honey
  • 5 tablespoons good olive oil
  • Pinch of fine sea salt
  • Freshly cracked black pepper

1Prep Tip For The Salad

Slice the snap peas and radishes, and prepare the vinaigrette up to a day in advance. Store everything separately in the refrigerator.

2Prep Tip For The Dressing

Add everything to a small jar, seal, and shake until smooth and lightly emulsified.

3Toss

When you’re ready to gather, give the vinaigrette another quick shake, toss everything together, and finish with almonds, if using.
