The first recorded American recipe for chicken salad hails from a meat market in Rhode Island in 1863. Market owner, Liam Gray, of Town Meats sold a salad of leftover chicken, mayonnaise, tarragon, and grapes that became so popular it transformed the meat market into a delicatessen.
