Ingredients

  • 1 package (11–12 oz) silken tofu, firm or extra firm or substitute 1 to 1¼ cups full-fat Greek yogurt for a tangier, lighter version
  • 1 small garlic clove, or ½–1 tsp garlic powder for a milder flavor
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white wine or champagne vinegar
  • 1 tablespoon white miso paste
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¾ to 1 cup fresh tender herbs, packed — parsley, dill, basil, or a mix. A small handful of tarragon adds a beautiful, bright flavor.

1Step 1

Add everything except the herbs to a blender or food processor and blend until completely smooth, scraping down the sides as needed.

2Step 2

Add the fresh herbs and pulse until just combined — you want it green and vibrant, not fully pureed.

3Step 3

Taste and adjust with more lemon, salt, or miso to your liking.

4Notes

Keeps in the fridge for up to 5 days. If it separates, just give it a gentle stir.
