Ingredients

  • 1 lb diced ham
  • 1 cup diced carrots
  • 1 cup frozen green peas
  • 1/2 cup sliced celery
  • ⅓ cup butter
  • ½ chopped onion
  • ⅓ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 cups milk or heavy cream
  • 2 tbsp Chopped Sage
  • 2 tbsp tarragon
  • Pastry dough of choice

1Step 1

  • In a sauce pan start on medium heat and begin sweating out the carrot, celery, and onion until the veggies are soft and the onion is slightly translucent.
  • Add in the ham and peas and stir lightly
  • Add in butter and incorporate well with the filling

2Step 2

  • When the butter has melted sift in the 1/3 cup flour and combine until the roux is a light blonde
  • Once the flour smell has dissipated stir in the heavy cream or milk and add in your herbs
  • Cook on a low simmer until the desired thickness remove from heat and chill

3Step 3

  • Preheat oven to 375 degrees Fahrenheit
  • Separate the pastry dough into ten equal size parts and lightly flour surface
  • Once the desired thickness of the dough is reached fill 1/4 of the dough with the filling and fold other side over into a half-moon shape
  • Crimp the rounded side using a fork to press down along the edge to seal

4Step 4

  • Lay pies out on a half sheet tray and lightly beat the egg in a bowl until homogenous and then brush each of the pies lightly with the beaten egg
  • Bake pies for 12 minutes or until golden brown depending on your oven
