Pat meat dry before applying rub. Coat generously and let rest for at least 30 minutes — or refrigerate overnight for deeper flavor.
Note: Because this rub includes brown sugar, it’s best used with a two-zone fire or medium indirect heat. That way, the sugar caramelizes without burning. Simply sear at the end to finish strong.
