Ingredients

  • ¼ cup dark brown sugar
  • ¼ cup Spanish-style smoked paprika (pimentón dulce)
  • 2 tablespoons kosher salt
  • 1 tablespoon coarse black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon mustard powder
  • ½ teaspoon cayenne pepper
  • ½ teaspoon ground cumin

Combine all ingredients in a small bowl and mix thoroughly.

Store in an airtight container in a cool, dry place for up to 1 month.

Pat meat dry before applying rub. Coat generously and let rest for at least 30 minutes — or refrigerate overnight for deeper flavor.

Note: Because this rub includes brown sugar, it’s best used with a two-zone fire or medium indirect heat. That way, the sugar caramelizes without burning. Simply sear at the end to finish strong.
