1Make the Dough
- In a large bowl or the bowl of a stand mixer, combine the flour, salt, and yeast.
- Add the warm water and 1/4 cup of olive oil, and mix until a shaggy dough forms.
- Knead the dough on a lightly floured surface or with a dough hook for 5-7 minutes, until smooth and elastic.
- Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for 1-1.5 hours, or until doubled in size.
2Prepare the Pan
- Preheat oven to 425°F (220°C).
- Generously drizzle olive oil in a 9×13-inch baking pan.
3Shape the Focaccia
- Once the dough has doubled, gently transfer it to the prepared pan.
- Use your fingertips to press and stretch the dough to fill the pan, creating an even layer.
- Allow to rest for 30 minutes.
4Create Your Garden
- Drizzle the top of the dough with more olive oil.
- Use your fingertips to create dimples all over the dough.
- Now, get creative! Arrange your chosen vegetables and herbs on top of the dough, pressing them lightly into the dimples. Think of it as a beautiful garden design.
- Sprinkle generously with coarse sea salt.
5Bake the Focaccia
- Bake for 20-25 minutes, or until the focaccia is golden brown and the vegetables are tender.

- Sprinkle with flakey sea salt.
