Ingredients

  • For the Dough:

    • 3 1/2 cups all-purpose flour (plus more for dusting)
    • 2 teaspoons kosher salt
    • 2 teaspoons instant yeast
    • 1 1/2 cups warm water
    • 1/2 cup extra-virgin olive oil, plus more for drizzling
  • For the Garden Toppings (Get creative!):

    • Fresh herbs (rosemary, thyme, basil, chives, dill, etc.)
    • Cherry tomatoes, halved
    • Sliced bell peppers (any color)
    • Red onion, thinly sliced
    • Olives
    • Edible flowers (optional)
    • Coarse sea salt or flaked salt.

1Make the Dough

  • In a large bowl or the bowl of a stand mixer, combine the flour, salt, and yeast.
  • Add the warm water and 1/4 cup of olive oil, and mix until a shaggy dough forms.
  • Knead the dough on a lightly floured surface or with a dough hook for 5-7 minutes, until smooth and elastic.
  • Lightly oil a large bowl, place the dough in the bowl, and turn to coat. Cover with plastic wrap or a clean kitchen towel and let rise in a warm place for 1-1.5 hours, or until doubled in size.

2Prepare the Pan

  • Preheat oven to 425°F (220°C).
  • Generously drizzle olive oil in a 9×13-inch baking pan.

3Shape the Focaccia

  • Once the dough has doubled, gently transfer it to the prepared pan.
  • Use your fingertips to press and stretch the dough to fill the pan, creating an even layer.
  • Allow to rest for 30 minutes.

4Create Your Garden

  • Drizzle the top of the dough with more olive oil.
  • Use your fingertips to create dimples all over the dough.
  • Now, get creative! Arrange your chosen vegetables and herbs on top of the dough, pressing them lightly into the dimples. Think of it as a beautiful garden design.
  • Sprinkle generously with coarse sea salt.

5Bake the Focaccia

  • Bake for 20-25 minutes, or until the focaccia is golden brown and the vegetables are tender.
  • Looking for more vibrant veggies? Top your cooked foccaccia with fresh herbs or vegetables to have your foccaccia photo ready.
  • Sprinkle with flakey sea salt.
  • Let cool slightly before slicing and serving with our Sauvignon Blanc.
