Cherry-Compote Pork Chops

Ingredients

For the Pork Chops:

  • 4 pork chops (bone-in or boneless)
  • Salt and freshly ground black pepper
  • 1 tablespoon olive oil
  • Fresh thyme or rosemary (optional) 

For the Cherry Compote:

  • 1 cup fresh cherries, pitted and halved
  • 1 large shallot, finely chopped
  • 1/2 cup balsamic vinegar
  • 1/4 cup dry red wine (such as Rombauer Merlot)
  • 1 tablespoon sugar (adjust to taste)
  • 1 tablespoon unsalted butter
  • Salt and freshly ground black pepper
  • A sprig of fresh thyme or rosemary

1For the Cherry Compote

  1. Melt the butter in a saucepan over medium heat.
  2. Add the shallots and sauté until soft and translucent, about 2-3 minutes.
  3. Add cherries, balsamic vinegar, red wine, sugar, and herbs. Season with salt and pepper.
  4. Simmer over medium-low heat for 20-25 minutes, stirring occasionally, until the cherries are soft and the sauce has reduced and thickened.
  5. Adjust seasoning to taste. Remove the herb sprig and set aside.

2For the Pork Chops

  1. Preheat the grill to medium-high heat. Season pork chops with olive oil, salt, pepper, and fresh herbs if using.
  2. Grill for 5-7 minutes per side or until cooked to desired doneness.
  3. Remove from the grill and let rest for a few minutes.

3To Serve:

  1. Plate the grilled pork chops and spoon cherry compote over the top.
  2. Pair with Rombauer Merlot, grilled romaine salad, and crusty bread.
