Reagan Rombauer Blackwood recently joined the show BeLatina with hosts Dr. Karent Siena and Chef James for a fun segment talking about three things important to both us and the show: food, wine, and family.

A third-generation family member, Reagan shared our extraordinarily food-friendly Sauvignon Blanc, Chardonnay, and Zinfandel which Chef James had paired with three delicious dishes. Inspired by the famous cookbook the Joy of Cooking, he put his own Latin twist on the three dishes listed below.

She sat with Dr. Karent Sierra and friends to share her family’s story and toast to strong women and the joy of being together. Wine is best when shared with others and these ladies certainly celebrated that!

Recipes by Chef James

Inspired by Rombauer’s long-standing relationship with the classic American cookbook, The Joy of Cooking, Chef James took several of its recipes and added his own signature Latin spin on them. Inspired by the countries of Peru and Argentina, he has tweaked three Joy of Cooking recipes to pair with three of our beloved wines.

Ceviche with Aji Amarillo by Chef James

Chef James’ spicy, fresh take on classical Peruvian ceviche makes Rombauer Sauvignon Blanc truly sing. Aji Amarillo, a yellow Peruvian pepper paste, is balanced with zesty lime juice and fresh cilantro to make this ceviche dance in your mouth as you wash it down with a glass of chilled Sauvignon Blanc.

Halibut

Sautéed Halibut with Fine Herbs by Chef James

The star of this dish is the rich butter sauce, punctuated with whatever herbs you have on hand. Its creaminess coats the halibut (or other white fish) and is mirrored in a glass of rich, bright Carneros Chardonnay. As Chef says, “Sometimes in simplicity, we find some of the most amazing dishes and this is just that.” Enjoy!

Rombauer Chimichurri by Chef James

A staple of Argentinian cuisine, chimichurri is a traditional accompaniment to steaks cooked on the parilla though we like it with any type of grilled meat. Chef James incorporates Rombauer Zinfandel into the sauce itself, its flavors adding a fruity, lush note to this classic sauce. Those flavors are further enhanced with eaten with a glass of the Zinfandel itself, an unusual yet delicious pairing.
