Preheat your oven to 250°F and line a baking sheet with parchment paper. Draw an 8-inch circle on the parchment as a guide.
2Whip the mixture
Beat egg whites with a pinch of salt until soft peaks form. Gradually add the sugar, one tablespoon at a time. Add 1 teaspoon white vinegar and 1 teaspoon cornstarch, then whip for 10 minutes, or until stiff and glossy.
3Shape the pavlova
Spoon the meringue onto the parchment circle. Bake for 1 hour 30 minutes, then turn off the oven and let it cool completely inside with the door closed.
4Serve
Once cooled, top with whipped cream and your choice of fresh berries, passionfruit, or sliced stone fruit. Serve immediately.
