Flavor Profiles
Alluring Damson plum and cherry notes dance in the glass, supported by hints of lavender, cedar, and English Breakfast Tea. The plum and cherry flavors come through to the palate, joined by red licorice and mild vanilla. Silky and refined tannins fill out the elegant, yet rich palate framed by bright acidity. The long finish is marked by a freshness, leaving you wanting another sip. This wine will be beautiful for many years.
The fruit for this wine comes from eight esteemed vineyard sites throughout the Santa Lucia Highlands – Garys’, Rosella’s, Sierra Mar, Lemoravo, Soberanes, Escolle, Guidotti, and Boekenoogen. Located across the region, these high elevation sites are marked by well-drained soil and the signature cool afternoon wind of the Santa Lucia Highlands, growing intensely flavored Pinot Noir with thicker skins, creating a full mouthfeel on the finished wine.
Most lots were destemmed before being optically sorted while a small portion was kept whole cluster. The fruit then went through a cold soak for six to seven days before fermentation. The finished wine was basket pressed and transferred to barrel where it was racked once, halfway through its time aging.
