Cabernet Sauvignon
The top expression of Cabernet Sauvignon we make each year. For those who love big, intense, and complex red wines, it is meant for sharing and for saving. It will continue to evolve over time, but in signature Rombauer style, it is absolutely delicious right now.
Flavor Profiles
Intense aromas of blackberry, black currant, warm pie crust, and crème de cassis all richly dance together on the nose. The palate is rich and intense, a seamless integration of fruit and oak, with dark fruit and vanilla flavors layered throughout. Firm tannins and mouthwatering acidity frame each sip and continue on to the long, lingering finish.
This reserve bottling comes from estate vineyards and top grower vineyards in Calistoga, St. Helena, Oakville, and Stags Leap District AVAs.
Picked at night, the grapes were carefully destemmed and optically sorted to ensure only perfect fruit was fermented into the wine. The wine was 75% barrel-fermented, providing a richer, more textured palate and seamless oak integration. The wine was gently basket-pressed before being racked to French oak barrels for malolactic fermentation and aging. The finest lots were carefully chosen and blended to produce the Proprietor Selection.
