FISH EN PAPILLOTE

For a party, make individual packets ahead of time and refrigerate. Let them sit at room temperature for 10 to 15 minutes before baking. Preheat the oven to 450 degrees F. For each serving, place on a *heart shaped piece of parchment paper, 1053:


-2 medium skinned pompano, perch, snapper, or trout fillets

Cover with:
-*Shrimp sauce, 552

Dot with:
-1 tablespoon butter


Close the parchment paper and fold and crimp the edges.
Bake about 15 minutes, until the paper is browned and puffed and the fish is firm and opaque throughout. Serve immediately.
